Here’s a delicious cake recipe by Elodie BelleGarde that is perfect for the Christmas season! Elodie was a Bloesem Class teacher for our Food Styling and Photography class where our students got to learn how to take fantastic mouth-watering food photographs! She is a French food stylist, photographer and writer based in Singapore and has worked for clients such as Cadbury’s, Lo&Behold, Brand’s and Appetite Asia.

Old fashioned chocolate and red wine cake

Serves 8­-10

150g caster sugar
150g butter, softened
4 eggs (free range if possible)
150g baking dark chocolate (I like a 70% minimum cocoa) 120ml red wine
180g plain flour
1 tbsp baking powder
1 tsp ground cinnamon
2 tbsp cocoa powder

Turn on the oven to 170oC. Grease a deep 22cm round cake tin and line the bottom with baking parchment.

In a large bowl, beat with a wooden spoon the caster sugar and softened butter until pale and fluffy. You’ll need a bit of elbow grease if you do this by hand. Add the eggs, one at a time so as to prevent the batter from curdling. If it does, add a little flour to bring everything back together. Roughly grate the chocolate with a large knife and add to the mix. Stir well. Add the red wine and stir once again well so that all the ingredients are combined.

Sift the flour, baking powder, cinnamon and cocoa powder in a medium bowl. Fold half of the dry ingredients into the chocolate batter and stop as soon as the flour is incorporated. Proceed the same way with the second half.

Transfer the batter into the prepared tin and bake for 30­40 minutes or until the skewer of a knife comes out clean. Leave to cool a little before taking the cake out of its tin. Serve simply with a scatter of cocoa powder or with a simple chocolate frosting.
